  • The ageing of the first months is made in French oak barrels of 225 liters of which 25% are renewned each year. The wine is slightly fined with eggs whites and bottled at the vineyard 20 months after the harvest.

  • The vinification follows the pattern of the "grand cru" ; the grapes are destalked, slightly crushed and fermented at controlled temperatures between 28° and 30° Celcius with a light over the top pumping for a soft extraction of the skins. The maceration can last 3 weeks.
